Waffle Iron Eggplant Parmesan, Sweet Potato Hash Browns, Salmon Cakes & Omelets!

Waffle Iron Eggplant Parmesan

What you'll need:

                One eggplant

                Finely grated Parmesan cheese

                1 egg

Assembly:

1. Pull out your trusty waffle iron and start it heating up, while  peeling and slicing the eggplant.

2. Make an egg wash by beating one egg with some water to make a thin liquid.  Dip each slice of eggplant first in the egg wash, and then dredge in the finely grated Parmesan.

3. Shake off any excess, and pop it on your pre-heated waffle iron.  My iron has a non-stick coating, so I didn't need any extra oil.

4. The thin coating of Parmesan turns into a delicate, crunchy coating.  The eggplant gets perfectly tender and cooked through in just three or four minutes! Enjoy! :)

 

Sweet Potato Hash Brown Waffles

What you'll need: (Makes approximately 5 waffles)

                1 1/2 lbs peeled sweet potatoes, grated (about 2 large sweet potatoes)

                3 whole, large eggs

                2 tbsp coconut oil, melted or in liquid state (melted, organic butter or ghee will work)

                1 teaspoon ground cinnamon

                1/2 teaspoon ground nutmeg

                Unsweetened apple sauce for topping

Assembly:

1. Mix all ingredients together in a mixing bowl. Be sure to mix well so everything is well combined or it won’t cook properly on the waffle maker.

2. Cook in batches on your waffle maker the same as you would with regular waffle. But keep the waffles on the thinner side or they don’t cook well.

3. Remove from waffle maker, top with unsweetened apple sauce and serve!

·         These can also be used as great bread substitutes for hamburgers, sandwiches, panini's, sammies, etc! :)

 

 Waffle Iron Salmon Cakes

What you'll need:

                2 cans of salmon (6 oz) drained

                2 eggs

                2 Tbls of ground mustard

                1 Tbls of chopped onions (I used dried)

                1 tsp of garlic

                a sprinkle of red pepper flakes

                Salt and pepper to taste

Assembly:

1. Preheat waffle iron and spray coconut oil on it, then mix all ingredients together in a bowl.

2. Once waffle iron is heated to medium heat, add all of your mixture and close lid. Mine took 4-5 minutes to cook.

3. Serve on bed of lettuce with feta and balsamic vinaigrette (or favorite dressing of choice)! Boom, salmon cakes made easy!

 

Waffle Iron Omelet

What you'll need:

                6 whole eggs

                1/2 cup finely chopped peppers

                1/2 cup finely chopped onions

                1/2 cup finely chopped mushrooms

                1/2 tsp. garlic powder

                1/4 tsp. dried thyme

                1 tbsp. oil

Assembly:

1. In a medium mixing bowl, whisk together all the ingredients until well combined.

2. Pour just enough mixture onto a greased waffle iron to cover the entire surface area. Do not overfill the waffle iron or you will have egg coming out the sides.

3. If you have a lock on your waffle maker, use it. You will hear a lot of squealing and whistling as this cooks. Once that noise fades, you know they are pretty much done.

4.Serve with some tomatoes, avocado or anything else you like in an omelet!

·         You can even prep and freeze these for up to 2 months, then thaw by putting in the toaster on the lowest setting and BAM, you're ready to go! :)
