Celebrate Valentines Day with: Sausage Pesto Meatza, Easy Raw Fudge & Dark Chocolate Fruit Hearts

Dark Chocolate Fruit Hearts

What you'll need:

            Strawberries

            Banana

            1 bar of dark chocolate of choice (something 75% cacao and higher)

Assembly:

1. Cut 1/4-inch slices of banana and using small heart cookie cutter cut heart shapes out of banana slice. Once you have cut the hearts out place in the freezer for 10-15 minutes.

2. For strawberries, cut in half and using heart cookie cutter cut hearts out of strawberry slices.  Once you have cut out strawberries place in the freezer for 10-15 minutes.

3. While the fruit is in the freezer, melt chocolate in the microwave or double broiler.  Remove fruit from freezer and dip fruit hearts in chocolate using a fork. Tap the side of the bowl to remove access chocolate and then place on wax paper. Let cool and enjoy! :)

Sausage Pesto Meatza

What you'll need:

            2 lbs ground meat – I used pork, but you can really use any.

            1 teaspoon garlic powder

            1 teaspoon parsley

            1 teaspoon oregano

 4 sausage links, sliced

If you are using raw sausage, I would recommend cooking them before topping your meatza.

            1 cup prepared pesto sauce

            optional – onion, mozzarella cheese

Assembly:

1. Preheat oven to 350 degrees. Mix the ground meat, garlic powder, parsley, and oregano.

2. Spread the ground meat mixture onto a parchment paper lined {or greased} baking sheet or pizza pan.

3. Bake for about 8 minutes, or until slightly under done. Top with pesto sauce and sausage, plus any optional toppings you want.

4. Bake for about 10 more minutes. Broil for a few minutes if desired.

 

Easy Raw Fudge

What you'll need:

             1 cup raw cashew butter (or nut butter of choice)

            1/3 cup coconut oil

            1/4 cup cocoa powder

            1/4 cup pure maple syrup

            1/2 teaspoon fine sea salt

            1 teaspoon vanilla extract

Assembly:

1. In a medium bowl, mix together the nut butter and coconut oil until smooth. (This works best if the ingredients are slightly warm! Alternatively, you could blend them together using a food processor.)

2. Add in the cocoa powder, maple syrup, sea salt and vanilla, and stir until smooth and creamy. Transfer the mixture to a dish lined with plastic wrap, for easy removal.

3. Place the dish in the freezer, and allow the fudge to set for at least an hour before slicing and serving. Thanks   to the coconut oil, this raw fudge will melt quickly if left to sit in a warm room, so it’s best served directly from the freezer. Enjoy! :)
